
We have a great deli in my town which I nod to in my books. Ours is called Brown Bag, but in my books I call it Goodman’s. I think in my next book I’m going to have to give Goodman’s some kick-ass scotcharoos because that’s what I always get from our deli. Delish.
When we were headed to the Halloween Party last weekend, one of my girlfriends mentioned she’d love me to make some scotcharoos to bring. Well, I’ve never made them. The first recipe I tried was a bust. So I texted a friend who used to bring them to our kids’ Cross Country banquets. Her scotcharoos were amazing and I’m sharing the recipe below. Enjoy!
Lynne’s Scotcharoos
I used a 9×13 pan and sprayed it with Pam.
- 1 c sugar
- 1 c peanut butter
- 1 c white corn syrup
Bring to boil in bowl in the microwave. I paused it a few times to stir and then put it back in.
To that mixture, add 4-5 cups of Rice Krispies.
Spread in a pan.
Top with a melted mixture of chocolate chips and butterscotch chips. No exact measurements but I went with: 2 cups chocolate chips and 1/2 cup butterscotch chips.
