It’s winter in Illinois and, as has become the norm, Mother Nature cannot make up her mind on if we want a mild winter or an extreme one. I mean, there were tornadoes the other day, so I don’t know what in the world is going on.
Regardless, this time of year I become a big fan of soup for dinner. This recipe is one of my favorites. It’s from the Tall One’s aunt and she raised three boys so clearly she knows how to feed a crowd. Without further ado, here we go.
Aunt Susie’s Hearty Hamburger Stew
- 1 pound ground beef
- 4 c. water
- 14.5 oz diced tomatoes – undrained
- 3 medium carrots – sliced
- 2 medium potatoes – peeled and cubed
- 1 medium onion – chopped
- 1/2 cup chopped celery
- 4 beef bouillon cubes
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp dried oregano
- 1 c. frozen green beans
- Shredded cheddar if desired for topping
In a large pot over medium heat, brown the beef. Drain. Add the next ten ingredients. Bring to a boil.
Reduce heat, cover and simmer for 15 minutes or until potatoes and carrots are tender. Add green beans. Cover and simmer until beans are tender. Top with cheddar if desired when you serve.
Yield – 2 quarts of soup. Susie usually doubled and froze the leftovers.
