Kat’s Summertime Lunch Sandwich

Is this really even a recipe? I mean, yes, but it’s so simple. That being said, I’m obsessed and have to share.

I think I first saw this on Baked By Melissa’s TikTok account and have just adapted to make it my own.
I should say, I typically abhor cottage cheese and couldn’t understand why she was using any. However, she really sings the praise of Good Culture cottage cheese (I’ve linked it below). I tried it and liked it. There’s a ton of protein and supposedly it’s good for your gut due to the live/active cultures. As a person who has turned fifty and my body has decided digesting food as we’ve done for the first forty-nine years was for the birds, I’m working on healing my microbiome, whatever that means. (Any suggestions, send them my way.)

Kat’s Summertime Lunch Sandwich

One or two slices of whatever Izzio bread I have, heavily toasted (Typically sourdough or Chia Cracked Rye)
A thick layer of Good Culture Cottage Cheese (I typically use low-fat)
Toppings: sliced avocado, sliced tomato are the norm.

That’s it, eat! 

Sometimes I rub cut garlic on the bread, drizzle with olive oil, top with salt and pepper – but those are all optional.
