Wowza, this recipe. The tall one is tricky when it comes to meat. He doesn’t really feel like a meal is a meal without it, but he’s picky. Chicken is often blah to him, though one of our boys could have it with every meal. He likes pork, but only some types. Steak is good, but he thinks it’s too pricey. So when I found this recipe – chicken thighs and spicy? Sounded perfect.
Then I made it. Holy moly, it was easy and delicious. Like crazy easy and ridiculously delicious.
This is not my recipe, but from the site linked below, Nutmeg Nanny. I pretty much followed her recipe to the letter other than the notes I have in bold below.
Recipe
1 package of boneless/skinless chicken thighs (my package had six and I used two packages.)
2 teaspoons smoked paprika
2 teaspoons garlic powder
1 teaspoon kosher salt
1 teaspoon cracked pepper
1 teaspoon red pepper flakes
1 teaspoon chili powder
1/2 cup honey
2 tablespoons apple cider vinegar
Directions
Mix the spices together. Put aside.
Mix the honey and apple cider vinegar in a bowl. Set it aside.
Take the chicken thighs and rub the spice rub on both sides. Lay in a cookie sheet (I lined my cookie sheet with foil.)
Broil the chicken under a low broiler for 5-7 minutes, flip and broil for another 5-7 minutes.
Pull out of the oven. The recipe calls for you to flip the chicken over and baste the top with your honey/apple cider vinegar mixture. I basted both sides instead. Back under the broiler.
The recipe calls for you to broil under a low flame for a few more minutes, or until the liquid mixture thickens. Mine took about seven minutes.
