Kat’s Breakfast Tacos
– 2 corn tortillas – small
– cheese – I use Calbot cheddar
– 1 egg
– splash of milk
– optional: bacon, avocado
Preheat the oven to 400 degrees. Put two corn tortillas on a cookie sheet. Rub one side of each with olive oil and flip it over.
Spread cheese over the tortillas. Sometimes I do this with shredded cheese, sometime a very thin slice on each half. Typically I use cheddar, about 1/2 ounce on each tortilla.
I scramble one egg with a splash of milk and salt and pepper. Then divide that egg between each tortilla.
If you are using bacon or avocado, put that on the tortilla with the egg.
Slide the cookie sheet with two open-face tacos into the oven for a minute, until the cheese melts. Then, pull out and fold the taco together. I wait until it’s warm to do this because otherwise my shells break. The melted cheese also helps it stay folded.
Back to the oven for about 3 minutes per side, flipping after the first three, then pull out and let cool down to edible temps.
