Okay, this is one I shared on Instagram, but everyone in the world needs to know how good oatmeal can be, so I’m sharing it here too. Or maybe you all know and I’m the last to join the party. Who knows. I eat this either for breakfast or lunch daily. Sometimes I switch it up. If you have a favorite oatmeal recipe, hit me up. This is delicious on cold winter days in Illinois. I want to acknowledge that this wasn’t my original recipe. I saw it shared on an Instagram reel and made up the amounts on my own.
- 1/3 cup old fashioned oats
- a dash of cinnamon and vanilla.
- about 1/3 cup of water
I microwave it for a minute, but I’m assuming microwaves vary. while it’s in the microwave…
- Mash a half banana
- Chop a handful of pecans
Then dump in the cooked oats.
To the oatmeal and banana/ pecan mixture, add..
- a spoonful of peanut butter
- a drizzle of maple syrup
Mix. It’s awesome. I think if I cooked it on the stove, I could swap the bananas for apples and let them cook. Maybe walnuts instead of pecans?
