Mo’s Salsa Verde Chicken

I’m going to name this recipe after my sister-in-law who likes to joke that there’s a name attached to every recipe in my family. She isn’t wrong and she’s the one who shared this with me, so I give you Mo’s Salsa Verde Chicken.

Mo’s Salsa Verde Chicken

In a crockpot, place 3-4 frozen chicken breast
Add taco seasoning (I made my own, recipe at the bottom)
Squeeze 2-3 limes or lemons on top
Pour over a bottle of Salsa Verde (I use Herdez, mild)
Cook for 8-10 hours on low. 
Shred when you have about 30 minutes left and let it sit in the juices.

I use this on salads, in tortillas, or as a bowl as seen in the picture with Cilantro Lime Rice (Zatarain’s), quac, sour cream, and cheese. 

Taco seasoning:
2 tsp chipotle chili powder (or regular chili powder)
2 tsp smoked paprika
1.5 tsp ground cumin
1 tsp garlic powder
1/4 tsp crushed red pepper flakes
1/2 tsp dried oregano
1 tsp salt
