Protein Balls

Man alive, these are delicious. A local friend named Tanna gave me the recipe years ago. She rolls the balls to coat them in chocolate. I just drizzle on the top, but they are glorious either way. In the picture you see a double batch. They go fast here, so we tend to have a double batch to start. Here’s the recipe for a single batch:

1 cup old fashioned oats

3/4 cup dark chocolate chips

3/4 cup peanut butter

3/4 cup ground flax seed

3/4 cup honey

1 teaspoon vanilla

2 tablespoons protein powder

1/2 cup chopped almonds

Mix all of the above. I scoop it by small ice cream scoop onto a parchment lined cookie sheet, then drizzle with melted chocolate chips (these are in addition to the 3/4 cup above). I use dark chocolate to melt too.

This time I also added about a heaping teaspoon of chia seeds. I’m also wondering if I can replace the protein powder with hemp seeds, but I haven’t tried that . 

Once they are scooped and chocolate is drizzled on, put them in the refrigerator to set. Once set, I put them in Tupperware and store in the fridge. Sooooo good. If you have a good recipe for protein balls/ energy bites, send it my way.
