Protein Sandwich

This came from Baked By Melissa’s TikTok. It’s stupid easy. 

Yummy Lunch Toast

  • One slice of bread – I used Izzio Chia Cracked Rye
  • Garlic clove
  • Good Culture Cottage Cheese
  • Tomato 
  • Avocado
  • Salt and pepper
  • Olive Oil

I toast the bread until it’s medium brown. Then rub the cut end of a garlic clove over the bread. Sprinkle with a little salt.

Next up, cottage cheese. My normal reaction to cottage cheese is to gag, but I love this brand and the protein is no joke, so about 1/4 cup goes down. 

Sliced tomato is up next. I’ve even used cherry tomatoes, but that’s way harder to eat. Finish up with a half of an avocado sliced. Season each layer as you go. Drizzle with olive oil when you’re done. 

Yum!
