Salsa Chicken is one of the few things all of my family will eat.
In a crock-pot, I put three or four frozen chicken breasts. I then add the following mixture of spices:
- 2 teaspoons chipotle chili powder, I use regular chili powder if I don’t have chipotle
- 2 teaspoons smoked paprika
- 1 1/2 teaspoons ground cumin
- 1 teaspoon garlic powder
- 1/4 teaspoon crushed red pepper
- 1/2 teaspoon dried oregano
- 1 teaspoon kosher salt
I mix the spices together, and put it over the frozen chicken breasts. Then I take a large jar of salsa (any brand, but I usually use Paul Newman’s Mild) and pour it over the top.
I cook the chicken mixture on low for 8-10 hours. Typically eight, but it just depends on my schedule that day. After that, I shred the chicken, then let it cook an additional half hour.
We use Salsa Chicken for tacos, quesadillas, on salad, etc. I love it a whole lot.
